Well first, are the brooms enchanted/charmed to fly or were they built using/by magic? A carpet could be made from magical threads. I figure whatever is most seen in the muggle mythology as witch/wizard transport would be what was used. I think it matters mostly in relation to country/culture. As for wizards in Asia with access to bamboo (instead of another wood) I don't see why not. Unless they found other woods to be sturdier than bamboo, in which case I could see avoiding using bamboo
