Why? Because using non-white then defines that person by what they are not - how not white they are. It makes white the default.

I mean, any group that is made of all types except for one is going to have issues with defining themselves beyond what they are excluding. But the difference is, People of Color is focusing on a trait that they have rather than on a trait that they don’t and it’s not using the word that the excluded type uses as a label as part of its label.

I'd go with the problem is it excludes all those minorities who have white skin and all the "white passing" people.

Nah. I prefer to just use the word minority, unless we are specifically discussing the issue of colourism *


*or whatever the correct term is for more skin colour based racism.

This. I have a friend who is Hispanic (native Puerto Rican) and another who is Middle Eastern and both of them can pass for white. They aren't white but they aren't really "people of color" either because people see them and assume they're white.

No, in my country don't fucking use this term to me, or any other non-white European here or you'll be yelled at.
