Didn't they actually have a real flame-spouting guitar for him to play? I think I remember reading something about that online, but, well, it was online.

Yes. George Miller insisted that the guitar could throw flames AND be played. And that the rig be real too. So, the Doof Warrior is on a real vehicle, being held on by bungee cords and he is actually playing a guitar flame thrower.
