I ship both canon and non-canon.

For me, the appeal of fic with a canon pair is often to put them in new situations.

For example, I really like AU fics where Palpatine found Anakin first and he thus was raised as Darth Vader and then he's married to Padmé how redeems him (TOTAL id fic, I'll admit).

Or for Mai and Zuko, I like to read about canon continuation with them facing the problems of the Fire Nation together.

Stuff like that is a lot of fun.

Okay, that makes a bit of sense. My experience with canon shippers is that they moonlight as canon police, so if you stray off the page even a little bit, they're already aiming the .50 caliber cannon to blow you apart before you even type 'The End'. Frankly, it takes a lot of fun out of fanfic.

See, I'm not generally into canon pairings, but you just described exactly what I thought the appeal would be.

Actually, isn't that the appeal of ALL fanfic? To put characters we like (or hate) into situations that we didn't get/are unlikely ever to get in canon? Not so different if you think about it.
