I do agree with you OP. For the life of me I still can't understand Zutara though. (Hot guy gets the pretty girl?)

My take on it was that a lot of viewers had a crush on Zuko and had already projected themselves all over Katara as the lead female. Ergo, Zuko hooking up with Katara = Zuko hooking up with viewer placeholder.

That was my take on it anyway, as there was so little interaction between them for the first two and and a half seasons that I had no other way to explain it.

I haven't watched ATLA in a while but I thought they had some chemistry in the scenes they were together in, though there weren't very many of those scenes.

I only watched the show about a year ago or so so I wasn't really into it when it was airing (so I have no idea when the ship started), but I actually thought the show was leaning in that direction toward the later seasons, and I didn't even ship it.

There were lots of reasons...

The bondage/necklace scene. (It's pretty much the episode that launched the ship. And a lot of early Zutara fic is bondagy/dubcon, soo... yeah.)

The natural opposites of fire/water combined with their bending fight at the end of the first season.

Both of them having missing/dead mothers and their complexes thereof.

The general belief at the time that Zuko and Iroh would join the Gaang in season two and prompt more interaction that way.

Katara's penchant for the bad boy type (see: Jet) + the fact that Zuko is outwardly a bad boy but is actually a massive dork.

Eh not really. They had some interesting character development and that appears to be what people latched on to. Zuko was also on this redemption sort of path for a while so it made sense to some that he would reconcile with Katara at some point eventually.
