I agree, OP.

On a side note, I love it when a fandom has not one but two juggernaut ships that are oppositional to each other. Watching them war with each other is hilarious. Prominent examples: Harry Potter fandom, House fandom, Supernatural fandom.

Normally I'd agree, but I still don't understand why Eren/Levi is the biggest ship in Japan.
I can understand most ships popularity but that one will forever elude me.

I don't get the popularity of Eren/Levi either. I was surprised when I went into fandom and that was the juggernaut.

I get it. Levi is voiced by Hiroshi Kamiya, who tends to attract the obnoxiously vocal obsessive types, and Isayama admitted that he designed Levi to maximize traits that appealed to females in Japan. His popularity was pretty much guaranteed. Then you have Eren, voiced by Yuki Kaji (currently a hot/popular newish male VA), who is the MC and the first major reoccurring character to interact with Levi. The ship is more about Levi's popularity and finding someone to ship with him than it is about actual canon relationships.

My take on it was that a lot of viewers had a crush on Zuko and had already projected themselves all over Katara as the lead female. Ergo, Zuko hooking up with Katara = Zuko hooking up with viewer placeholder.

That was my take on it anyway, as there was so little interaction between them for the first two and and a half seasons that I had no other way to explain it.

In cases where there's meaningful interaction or interesting antagonism, sure. But Sterek? Clint/Coulson? Even Arthur/Eames only had a few lines in canon.

I don't even ship the two, and I know exactly where the shipping comes from. (I don't get Clint/Coulson, though.)

If you like both characters, for whatever reason (attitude, looks, etc.), why wouldn't you like them together? And even if canon doesn't provide a lot of interaction, isn't that what fanfic is for - extending the stories of the characters/universe that people enjoy? Plus, every pairing that you mention has implied off-screen interaction, which can be a hell of a lot of fun to play with. A few lines is enough for me. As a matter of fact, I don't even need that, that's right, I sometimes like crossover pairings - people who have never met, people whose universes may even contradict each other. If I like the idea of two characters together because I like those two characters separately, I will put them together. Them existing in the same time/location/universe just makes it a lot easier (and more plausible).

Clint/Coulson was mainly Pair the Spares and the big Clint ship besides Clintasha, mainly from Coulson fans who loved him and wanted to ship him with someone.

Me too. Expect like, the giant popularity of clint/coulson will continue to be one of the greatest unknown mysteries of the universe.

Clint and Coulson work well together. An agent/handler, calm/jumpy, office/fieldworker plus there was a lot of room for development after the Av 1.

I sort of agree, if only because the reason is this: certain tropes/kinks are extremely popular, and most media has characters that can be shoved into those trope or kink boxes by fans, regardless of how well those boxes fit the actual characters themselves.

Of course occasionally you might get an extremely popular trope that actually does perfectly fit two characters like they were tailor made for it, usually because they WERE, they were specifically written that way, and that's when you get the phenomenon of a canon pairing being one of the most popular in a fandom.

I can usually see where the juggernauts are coming from as well. It's when pair-the-spare ships like Clint/Coulson or crack ships like SouMako take off and become big that I start scratching my head and/or get annoyed. (And before anyone asks why it would annoy me, it's because I wish people would write fic for other ships involving the characters in question instead. Yes, I'm selfish and it's all about meeeee.)
