I made my partner's birthday cake - death by chocolate. Not pleased with it if only because it came out too moist. Like, even after setting overnight it was so moist that I couldn't ice it without it crumbling. She ended up having a death by chocolate cake pile instead of a cake.

Now, I do hate me some dry cake, so I'm happy to err on the side of the type I like, but idk how how to make it slightly more dry - firm enough to ice.

Two questions:

1. Cocoa powder or chocolate in the mix?
2. Did you beat the butter and sugar for a long time until it was super fluffy (like whipped cream)? That makes for a much airier, lighter cake.

Cocoa powder, and no - my electric mixer died so I have to hand-mix all my baking efforts. Actually come to think of it there's no butter in my recipe.

Too much fat/liquid in your recipe? Was it underbaked? What flour did you use?

I would believe too much liquid. Just regular flour - I have self-rising but my recipe didn't call for it so I didn't feel safe substituting.

That is pretty much exactly my recipe. Down to the boiling water. :( Slightly more flour in mine but not much.

Well shoot, I don't know what to tell you, because I follow that recipe exactly and it's never failed me. Don't be alarmed by the addition of the boiling water, BTW. It sounds nuts, but that's not necessarily the cause of your cake falling apart.

There are a few things you can do.

Altitude and humidity can sometimes affect your cake. Sometimes putting the cake in the fridge before frosting can help. Sometimes pulling back on the liquid a little can help, but be careful you don't do it by too much. But, if you like the cake and just frosting it was the issue, then you could go with a softer frosting (add more milk or cream) or you could go with a cooked frosting that you pour while it's still warm and then it hardens up as it cools (like some fudge frostings).
