I think people on both extreme ends of the issue need to remember that there is a difference between making fun of other races vs. making fun of racist stereotypes, racists, and racism in general. The former is racist, the latter is at least neutral if not fully anti-racist, although it can sometimes be done clumsily to the point where it is just as ineffective and offensive.

I was going to make this exact comment. I believe Blazing Saddles is only truly offensive if you can't tell the difference.
