Cooks of fandomsecrets: Help me?

I like to go to a Thai restaurant and one of the dishes they cook there is an eggplant stir fry thing. The eggplant is soft and kind of meaty. I've made stir fries before and I love it so much that I bought an eggplant wanting to try to make it. I thought I could look online but there's no specific guide on what to do with it for a stir fry...they just assume you know.

Help me? I'm considering calling the restaurant like an idiot and asking them wtf to do. It's one of the big eggplants that's like 7-8 inches long and it's a little soft.

I have no advice sadly but I will say as I scrolled by this comment I misread the subject line as "cocks of FS" and then skimmed further to "It's one of the big eggplants that's like 7-8 inches long and it's a little soft." and well...

I didn't misread the subject but once I read the comment and got to the 7-8 inches long part I couldn't help cackling.

I'm obviously mature af.

My guess would be that they braised it. Maybe steamed it first to make sure it was soft, then braised it?

Cut the eggplants in 1/2 lengthwise and then slice crosswise into wedges, no more than 1-inch wide.

Heat a wok or large skillet over medium-high flame and add the oils; tilt the pan to coat all sides. When you see a slight smoke, add a layer of eggplant, stir-fry until seared and sticky, about 3 minutes. Season with salt and pepper. Remove the eggplant to a side platter and cook the remaining eggplant in same manner, adding more oil, if needed.

After all the eggplant is out of the pan, add the vegetables and root spices; stir-fry for a minute until fragrant. Add the sauce and cook another minute, until the sauce has thickened. Put the eggplant back in the pan, tossing quickly, until the sauce is absorbed. Garnish and serve.

What does the restaurant call this dish? If's a basic stir-fry, then I recommend you go with Asian eggplant-- the longer thinner variety, not the more familiar rounder ones. Wash thoroughly and there's no need to peel it unless you really want to, 'cause it's kind of a pain. Cut into rounds or large julienned pieces.

Eggplant does really well with a combination of stir-frying/braising. You can try sauteeing some garlic and onion in vegetable oil, then adding eggplant and maybe some soy sauce and oyster sauce, some chili sauce if you want it spicy, pouring in 1/4 cup water, putting the lid on and simmering it on low until the eggplant is very tender. It will probably take at least 15-20 minutes depending on how much you're doing at once.

Add Worcestershire sauce as you're cooking it. That should give it the "meaty" flavour you're looking for. As for the texture, don't overcook it, or it will be mush. Slice medium-thick, and fry it like you would a steak, with salt and pepper. Add the Worcestershire just before it's done. Serve over basmati rice (cook the rice with jasmine tea leaves in a tea ball, for authentic flavour).
