What does the restaurant call this dish? If's a basic stir-fry, then I recommend you go with Asian eggplant-- the longer thinner variety, not the more familiar rounder ones. Wash thoroughly and there's no need to peel it unless you really want to, 'cause it's kind of a pain. Cut into rounds or large julienned pieces.

Eggplant does really well with a combination of stir-frying/braising. You can try sauteeing some garlic and onion in vegetable oil, then adding eggplant and maybe some soy sauce and oyster sauce, some chili sauce if you want it spicy, pouring in 1/4 cup water, putting the lid on and simmering it on low until the eggplant is very tender. It will probably take at least 15-20 minutes depending on how much you're doing at once.
