One easily prepared fingerfood puff pastry rolls:
1 roll of puff pastry (refrigerated, not frozen)
~ 200g diced bacon
~ 300g sour creme/creme fraiche
~200g grated cheese
1 egg yolk (optional)
herbs as you like
Pre-heat oven to about 400° Fahrenheit. Line an oven tray with baking paper.
At home, mix together sour creme, cheese and diced bacon. Taste the mixture, add seasoning as you like. Be careful not to use too much salt, the bacon will taste saltier after baking. Spread the mixture on the rolled out sheet of puff pastry. Carefully roll sheet again*; cut off slices starting from one end, about 1-2 centimetres thick. Put on oven tray.
Seperate the egg yolk from the white. Whish the yolk a bit, then use a brush to glace over the top of the slices. Then put the tray into the pre-heated oven.
Cook for about 20 minutes, or until golden. When finished remove from baking tray to let them cool.
* If mixture is rather gooey wrap the roll in tin foil and put in the freezer for an hour or two. That makes it easier to cut.
You can vary the filling by adding or removing ingredients. I've seen these rolls done with salmon instead of bacon, or just cheese. Different herbs/seasoning also give them different tastes. You don't have to bake the whole roll, you can just cut up a couple of slices and then wrap the rest in tin foil and put in the freezer to use later. So you can prepare these in advance and then make just as much as your mother needs. Though if you don't plan to use them up in the next sitting, cut the remaining roll into smaller pieces (about as thick as the amount of slices you need) and freeze them seperately. (The point is that you shouldn't deforst and re-freeze things, it makes them go bad.)

(Anonymous) 2015-08-12 12:05 am (UTC)(link)Do you have a blender? You could try making a smoothie with the oats, banana and milk. This way your mother would be able to drink it, and with the oats it would still be a filling breakfast.
