Finger Food Recipes
(Anonymous) 2015-08-11 11:31 pm (UTC)(link)I've been using instant oatmeal packets for breakfast so I want to turn those into muffins for easier eating. I've googled so much for muffins using the packets, but can't seem to find an easy one. I don't have flour, sugar, eggs in the house. I've found some recipes I can use going forward, but I need to use up the packets first.
So here are my questions: has anyone successfully made muffins or baked oatmeal squares using instant oatmeal packets?
Are there recipes out there that don't require silverware for easy cooked meals? I've tried looking at toddler centric websites and my head just goes wibbly wobbly at it all.
Mom has always had frozen foods and that's what I'm used to.

Think of what kind of foods you'd be served at cocktail hours, like puff pastries with fillings. You can usually find a sampling box at Costco and they're all frozen so you just have to bake them in the oven.

One easily prepared fingerfood puff pastry rolls:
1 roll of puff pastry (refrigerated, not frozen)
~ 200g diced bacon
~ 300g sour creme/creme fraiche
~200g grated cheese
1 egg yolk (optional)
herbs as you like
Pre-heat oven to about 400° Fahrenheit. Line an oven tray with baking paper.
At home, mix together sour creme, cheese and diced bacon. Taste the mixture, add seasoning as you like. Be careful not to use too much salt, the bacon will taste saltier after baking. Spread the mixture on the rolled out sheet of puff pastry. Carefully roll sheet again*; cut off slices starting from one end, about 1-2 centimetres thick. Put on oven tray.
Seperate the egg yolk from the white. Whish the yolk a bit, then use a brush to glace over the top of the slices. Then put the tray into the pre-heated oven.
Cook for about 20 minutes, or until golden. When finished remove from baking tray to let them cool.
* If mixture is rather gooey wrap the roll in tin foil and put in the freezer for an hour or two. That makes it easier to cut.
You can vary the filling by adding or removing ingredients. I've seen these rolls done with salmon instead of bacon, or just cheese. Different herbs/seasoning also give them different tastes. You don't have to bake the whole roll, you can just cut up a couple of slices and then wrap the rest in tin foil and put in the freezer to use later. So you can prepare these in advance and then make just as much as your mother needs. Though if you don't plan to use them up in the next sitting, cut the remaining roll into smaller pieces (about as thick as the amount of slices you need) and freeze them seperately. (The point is that you shouldn't deforst and re-freeze things, it makes them go bad.)

(Anonymous) 2015-08-12 12:05 am (UTC)(link)Do you have a blender? You could try making a smoothie with the oats, banana and milk. This way your mother would be able to drink it, and with the oats it would still be a filling breakfast.

Toddler foods are probably not a bad place to start. Sandwiches, burgers, chicken fingers, fish sticks. Probably a lot of foods that "shouldn't" be eaten with fingers actually can, as well.

i think your current oatmeal packets would be best served as regular oatmeal for yourself, but only because the extra ingredients like brown sugar or whatever would possibly mess with the flavor or chemistry of whatever recipe you would use.
also, consider soup in a a mug? i don't think I ate chicken noodle with a spoon until i was maybe 14 years old and it never hurt me any. that might be an option for quite a while if your mom's problems with silverware progress.

(Anonymous) 2015-08-12 03:54 am (UTC)(link)For no silverware eating, try spreading the bottom half of a tortilla with cream cheese and whatever deli meat or cheese you prefer. Smear a little cream cheese on the top edge and roll up from the bottom, then eat, or slice into rounds and eat for easy finger food.
In the end, you will probably have to learn how to cook. It'll help out your mother, and you'll benefit, too. It seems harder and more intimidating than it is, but start off slow (breakfast foods are a good bet, learn how to make scrambled eggs and pancakes) and build from there. Yes, frozen foods are what you're used to, but you don't have to eat them your whole life.
