Some that come to mind that either I like or my friends really like: Mononoke, Boogiepop Phantom, Mushishi, Paranoia Agent, Ergo Proxy, and Hell Girl.

Mushishi is an absolutely amazing show. I love it so much. Have you watched Natsume Yuujinchou? It's got similarities with Mushishi, but less weird. It's very nice in it's own way also, though.

I almost included Natsume Yuujinchou actually. It's another one that I haven't gotten to yet but I've heard all kinds of good things about from friends.
