Since we seem to have one of these semi-regularly, let's do it regularly!

My contribution: Since I would rather pull my wisdom teeth out with rusty pliers than hie down to the Ex (Canadian National Exhibition), I tried making this recently:

Yes, that is a grilled cheese sammich wrapped in bacon. Yes, it was terribly unhealthy. Yes, it tasted awesome. I used garlic butter.

We just used olive oil, but some recipes call for bechamel instead.

Really delicious! I think I'd like it more saucy next time, but otherwise, it's amazing.

I'm trying my hand at Eggs Benedict. I've never made hollandaise, but I've practiced poaching eggs and I think I've got it down pretty well.

I'm going to make my first quiche tomorrow. I was going to make it today but the pie crust turned out to be pizza dough when it thawed.

My partner needs to get better at labelling his dough.

I've recently found out I have coeliac disease, so I've been cooking lots of stuff from scratch recently. So far I've done gluten free stir fry, Quorn chicken curry, orange marinaded Quorn chicken with honey roasted parsnips, a gluten free cherry pie, and a gluten free peach crumble.

I only really learned to cook properly a year ago. I wish I'd learned sooner instead of being lazy.

I had to find a vegan dessert recipe because a friend's intolerance to milk and eggs reared it's ugly head.

I'm very leery when it comes to vegan food (terrible past experiences with tofu and soy products), but I found a recipe for cream of wheat using coconut milk and adding raspberries. It's very easy to prepare and absolutely delicious! Definitely something I'll make again.

Cookies made with olive oil or sunflower oil instead of butter are also really tasty if you're struggling for things to feed her, anon.

I've made this vegan chocolate cake before and it's pretty good and easy to do:

Vegan Coconut Chocolate Pudding
Ingredients: (~4 servings)

3/4 C sugar
3 TBS cornstarch
1/3 C Hershey's Special Dark Cocoa Powder
1 14oz can coconut milk (shake well)
2 tsp vanilla extract

Pour sugar into a microwave safe bowl then sift in the cornstarch and cocoa powder. Make sure it's really blended without any lumps then whisk as you gradually pour in the coconut milk until combined.

Place in the microwave for 3 minutes, stir, then heat for one more minute before stirring again. If it doesn't look shiny and thick, try 30-60 seconds more (but keep an eye on it or it will boil over!).

Stir in the vanilla extract then cover with plastic wrap and refrigerate until chilled. Optionally, top servings with flaked coconut (and whipped cream, if you're having dairy!). Can also be used as a pie filling; I recommend graham cracker crust.
