I started Gravity Falls first and got into Steven Universe later, and found it harder to get into, though I now like both.

GF caters better to my thirst for mystery and is exactly the brand of weird and creepy that I loved in the cartoons I watched as a kid. SU starts off a little weak in the areas that appeal to me as an adult, but builds up to a very compelling story arc and Cartoon Network seems to be less restrictive a master than Disney, so SU has that going on for it too.
