There are many different things fanfic can provide, and it's silly to pretend otherwise

That's a perfectly fine opinion.

But what exactly DO high school AUs provide that we can't get a million times better in other settings?

A specific kind of fluff, I'd guess.

It provides (generally) a setting for young versions of your favorite characters to interact in a familiar setting together. This can also provide you with kinks such as first time fic or awkward sex or others that I can't think of. And it is a great setting for some fluff. And I expect some people use HS fic to deal with shitty HS experiences in RL.

So, what other "better" setting is there where the reader or author went to an all-one-gender high school, and it's fun experimenting with "okay, never had a co-ed high school experience, so I want to play with this"?

That's why I'm tempted to write a high school AU. Heck, I read them because said high school wasn't just all girls, it was a Catholic school. I never had a American public school experience at all (was in Catholic school from kindergarten until I graduated high school). I also haven't had a boarding school or Japanese school experience. So it's all new ground for me, even if it is idealized.
