I can't really get into television series, too, OP, though mine is more "I can't get into live action television". The last live-action one I remember watching from start to finish was Doctor Who, and even then that was just for the season Donna was on. I think if they're short "binge"-y series, I might have an easier time getting into them, because I just don't have the time, patience, or desire to watch a show that's 15-something episodes and/or 5-6+ seasons (s'why I've dragged my heels on Psych, Gilmore Girls, and Walking Dead). I can't describe it, but that's just how it's been for me.

Cartoons, I can give or take, but even then I don't watch nearly as many of them as I used to even a year ago. I think the only ones I'm looking forward to are GOTG: TAS and being able to legally watch Thunderbirds are Go. :/

I have that problem with shows too. A show gets past 3 seasons or so and the thought of watching it just feels too daunting.

Plus I just wish there were more shows that had a strong story arc planned from the start instead of just going on and on for as long as the ratings are high enough.

Meant to say "That's 15+ something episodes per season and/or is 5-6+ seasons". Sorry for any confusion!
