I'm surprised by how few people are agreeing with you, OP. I definitely get pretty annoyed when I see someone saying they don't like one of my favorite characters because of [X/Y/Z]. I do my best to keep my chill and stay casual about it, and I think I do a pretty good job, but that doesn't mean I'm not annoyed internally.

I wonder if these people who think you shouldn't feel so defensive would say the same thing if it were your significant other being criticized? Because I don't know about you, but that's honestly a bit like what it can feel like for me, when someone criticizes one of my faves. Sort of like they're criticizing someone I'm in love with, and sort of like they're criticizing me. And it's not because I have some kind of raging fangirl crush on my fave and deludedly feel as though they were my bf/gf. I just...kind of love them, both as half of my ship and for being who they are.

OTOH, my level of annoyance varies, depending on how deeply invested in the character I am. There are only a couple of characters that a really, really hate seeing criticized. But there are probably a couple dozen for whom it sort of registers as "Oh, someone is totally ascribing the worst possible interpretations to this character's actions. That's annoying, and also, why does this person have such a problem with this character that they are inclined to see the worst in everything the character does?"

And sometimes I like a character in fanon but don't really like them in canon, in which case I'm the one criticizing them. So I guess in that case I'm unknowingly inspiring irate feelings in some other fans. :)
