Why? You'll have to cut it less.

Much more likely to die, will need to be watered more often and exposes more of the dirt to being washed away/drying out hard.

Like, fine if it's kikuyu grass but your average lawn grass goes "well I'm only 1cm high now better die back and start growing all over again" while your 3-5cm grass is all "okay, okay I'm fine"

Cutting grass too short is unhealthy for the grass. You'll end up with a patchy, uneven lawn.
