Anakin Skywalker, Padmé, Shmi

I actually think you could gender swap the OT characters (Luke, especially, was envisioned as a woman at one point. But Anakin, Padmé, and Shmi have to stay how they are.

Shmi due to the way Anakin was born -- it wouldn't work with a dude so Anakin couldn't have a father but no mother.

Padmé had to be woman to give birth to Luke and Leia.

And she couldn't be gender swapped with Anakin because a big part of Anakin's story is fearing that she'll die in childbirth and then being ignorant of the survival of his children. Which I don't think would be feasible if he was the pregnant partner.
