From what I've seen of shipping, it seems to be more about fleshing out the characters and digging into them and seeing how they feel toward other characters and what they'd be like in a relationship than it is about romanticism. I think people enjoy seeing certain dynamics, which doesn't necessarily line up with wanting a partner or wishing those dynamics applied to their own relationships.
