Uh, she probably already knows Cowboy Bebop, right? It's an obvious suggestion but I find it to be a classic for a reason. Tiger and Bunny is also lots of fun and surprisingly heartfelt. (I think it runs for about 24 episodes?) I also liked Samurai Flamenco which was bizarre but delightfully so and somehow reinvented itself every couple of episodes.

I'm not the best person to ask about anime because I only watch now and then, but Haikyuu!! is extremely adorable as well. It's about volleyball (And teamwork and friendship; all that good shit) but is way more engrossing then I would've originally given it credit for. (Plus the cast is adorable.) That one is ongoing though, and I have no idea how long it will run because the manga is still being published as well.

I'll suggest Cowboy Bebop. The shorter and more complete the better.

I think Samura Flamenco may not be the best series to rec to someone who doesn't like anime, unless they like(d) sentai/sentai inspired series.

Ah, I guess that's true enough. It does play on a lot of tropes. (I guess I was mostly thinking about it because it's short and I find it to be extremely entertaining, but if OP's friend doesn't like anime then it might leave them confused.)
