How do you stop yourself going crazy when you know you have a serious chronic illness but diagnosis is taking forever?

That's a relatively hard proposition. Some people find that throwing themselves into school or work is an adequate distraction, others find that escapism is better for them.

Try to keep your normal routines and surround yourself with support, if possible. Just having someone to talk to (not even necessarily about your issues) usually does a lot for your mental state.

You get on with life as best you can and take good care of yourself.

Don't doctor shop (keep trying new ones until you get told what you want to hear), but if the one you're seeing isn't actually listening to you or even writing notes, do look for someone in your area who has positive reviews or has treated other people with chronic issues, and explain to them that this is making your life harder than it has to be.

Try not to live your life around the idea of getting a diagnosis though. That's not a good thing to be emotionally invested in. Some people never get answers. That's the reality of medicine. It's not perfect. Even if you have a name for it, you can still only really manage the symptoms as they come.

You don't want doctors to rush you around to specialists and testing facilities like you're on fire. That means your condition is rapidly declining. I actually heard my doctor use that phrase on the phone when she was talking to a specialist the other day. Like, cool, I'll just sit here and try not to decline too much. Don't mind me.
