I've only managed to make fried rice that turned out right once. It's sad because I love fried rice.

Are you using hot rice that you just cooked? Fried rice comes out best when you use cold leftover rice.

I've been using cold leftover rice every time because that's been emphasized by every recipe I've come across. I don't know what the problem is.
