Cooking!

I decided to be adventurous today and cook my family a big Sunday dinner. I'm doing baked ziti (from homemade tomato sauce) with cheesy garlic bread and salad.

Anyone else want to share cooking? I'm just so excited by this and i hope it turns out good, it's the first time I'm making it and my dad's the one who usually does it, so I have a lot to live up to.

I've only managed to make fried rice that turned out right once. It's sad because I love fried rice.

I discovered the joy of adding redcurrant sauce to literally everything. Rice, potatoes, chicken, fish - in it goes! Maybe I'm weird, but it's delicious.

eta: and cheesy garlic bread sounds AMAZING, my mouth's watered at the very words :D

I'm so excited by the cheesy garlic bread too. I was going to just do regular garlic bread but then I was given fresh mozzarella so I want to put it to go use.

I was lazy today and just made pasta and a tomato sauce out of whatever I had available (which ended up being tomatoes, cream, a bit of butter, salt, pepper, some sugar to round out the taste and flour to thicken it out a bit)

Not sure if it counts as cooking but I've tried my hand at quince jelly for the first time today. I hope it turns out well jellied and tasty!

(Also, we have a rose bush in the garden with lots of fruits on it; I know it's not dog rose but I've very much tempted to make cynorhodon jam out of it. D'you think I should try?)

I say it's worth a shot, I'd try and figure out what it is a little more closely to make sure it's edible. I'm not one for plants much. I kill mine.

Wooooo I'm really jealous. I haven't had quince jelly in a long time and it's so incredibly difficult to get your hands on any around here.

Definitely try to make the rosehip jelly! Do it and share the results!

I had my first try at cooking quesadillas this evening. Came out good, and I know where exactly I can improve.

I had an indulgence last night and made lamb chops. Crusted with dried herbs, pan-seared and finished in the oven, and dolloped with a mint pesto and a side of baby carrots. It's one of my go-to "I am alone this weekend and want to do something fancy" meals, because I am the only person in my family who'll eat lamb. Last night's was slightly overcooked -- I was in a bit of a foul mood and wasn't paying as much attention as I should have -- but still pretty great.

Oh man, that sounds great. I tend only to eat lamb when I'm at my Greek friend's house because her relatives are amazing cooks.

I made lamb chops last night with oregano, rosemary and a little coriander. They came out great.

I tried to make two trays of lasagna the other day but ended up with one tray and then only one layer minus lasagna in the other tray. I absent-mindedly put them both in the oven and only realised baking the tray of only one layer was pointless a few minutes later and decided to put it in the fridge to have with spaghetti later and it turns out that spaghetti with baked cheese and white sauce on top of the bolognese is really good!

I'm really glad that turned out well because halal meat is a pain to get for me and it would be a terrible waste to mess up. I made brownies to give to some new friends earlier too and they all really liked them, which was a huge relief because I'd actually burnt the edges a bit :x

Baked ziti's the best!! I'm sure it will be great.

I'm putting most of my energy today into meal prepping lunches for the next week. I know it's going to be crazy and I'll be really tempted to snack while on campus, so I'm trying to head that off with a filling lunch (pasta + green bell pepper + asparagus +chicken breast, with a Greek yogurt dressing to dip into.) Actual dinner tonight is going to be a baked sweet potato. Not very elaborate, but delicious.

I hope it comes out well!

I made some seven layer dip with black bean dip as a base last night and it was thoroughly demolished by the dinner company, and the compliments were very nice.

No huge plans today. Probably just going to roast some vegetables and leave it at that since I made an omelette for lunch.
