My writing is going well, but I have a writing buddy(I beta 'd them in the past) who is frustratingly insecure and keeps a lot of good stuff as drawerfic because some ex-friend of hers likes to convince her that "nobody will read" anything that friend disapproves of (wrong ship, characters she doesn't like, AU's she doesn't like). Sometimes she won't even write some ideas because of it.

I'm not mad at her, but I wish she had the confidence to tell this asshole to fuck off and mind their own business.

I don't want to force her into anything, but how can I convince her that her ideas are good and interesting?

Besides telling her there really isn't much more you can do. Just keep telling her how cool you think her ideas are and be encouraging.
