Ross was not fired from the museum because someone stole his sandwich. He's told he needs to take a break because they're concerned about his mental stability. At that point in time, he's headed for his divorce with Emily and has moved out of his old apartment yet kicked out of the new one (Emily's cousin owned it). As he tells Monica, the sandwich is literally the only thing he has keeping him going at that moment. (He does get fired when, after he finds a new apartment, he invites his boss over and Ross freaks out when he sees Monica and Chandler having sex across the street.) Like the other reply says, it's a sit-com, and out-of-proportion reactions are the norm. I actually don't see anything unrealistic in Ross having a really, really hard time and then blowing up over a little thing. Straw that broke the camel's back and all.
I say all this as someone who is not a huge fan of Ross, but there's so much stuff to pick on without making stuff up and mischaracterizing it. How about the fact that he freaks out about Rachel's platonic relationship with Mark? Or how childish he is at many, many points, such as his overreaction to Rachel accepting Joey's proposal (even though her fear of being a single mom is totally understandable)? Or how he doesn't want to be divorced for the 3rd time so he doesn't tell Rachel that they're still married, blatantly lying about it on several occasions?
