Yeah, I walked into the fandom ready to ship them but after a combination of RP and some time away in Dragon Age I got bored of them. I don't really read fic in the Hobbit fandom anymore because it's either Bagginshield, Kíli/Tauriel or includes Thranduil. I dislike Thranduil and I have a ship for Kíli (and not Fíli either - RP made me ship him with Thorin).

I know I also felt somewhat similar back when I was in the Transformers fandom. The juggernaut pairing there, I read plenty of fics about it because they were there, but it was hardly my favourite ship. My ship was rare enough not to be common but never seemed to get the "rare pair" tag.

Yep, either that or Bilbo/Bofur (which I hardly see anymore). I'm clinging onto the other corners of the fandom and only dabble in Bilbo/Thorin occasionally, but it gets boring to see everything flooded with them and sometimes, I get really annoyed about it.
I think this is part of the reason why I don't read much fanfiction anymore and mostly only write my own.

The other problem I have is that a lot of fics stick very closely to the plot. You get really bored once you've read a few dozen fics that hit all the same basic plot-beats.

This is a systemic fanfic problem though - a lot of fandoms have exactly the same thing, lots of fics that follow the canon plot with little variation.

Yes, this! We've seen the journey, and seen it again... and again... If you want to write something that sticks to canon, please don't just retell it all again. Pick out the important bits, or the parts that haven't been told yet or at least just shrink it into one or two paragraphs until you come in with the relevant plot.
I prefer fanfiction that explores the parts that were left out or how things could have been different.

On that note, I'm really getting sick of fix-its. Yes, main characters died. Yes, it was sad and fandom has a hard time getting over it. But eventually, the stories about how a certain different character stepped in and managed to save the other character just get old.

Well I admit, I am really a fan of fix-its, but other than that I totally agree with you - gloss over the parts you're not making great changes to and get to the parts you are changing!
