Re: Older things you just got into
The plot is so much better than in Borderlands 1. I went into it mostly spoiled and I still found myself yelling at my computer during certain cut scenes. There's an actual story arc this time that isn't just "oh the Vault is secretly full of monsters, who'd-a-thunk! Game's done now." (I skipped the DLC for 1 and moved straight on to 2, so I might have missed some follow up there, but in general I was just not impressed with how that game ended.)
There was a spot for me about 3/4 of the way through the game where my gun options kind of stagnated for a while, but for the most part I agree - everything in BL2 just felt smoother and more accessible to me. Though sometimes the amount of choice available in weaponry can be kind of paralyzing - I find myself hoarding weapons just in case I run across an enemy where I really need an assault rifle with +6 crit but 20 less base damage and no burst fire (but it can zoom!) and oh, better hold on to this one too, it has lightning damage, or maybe... etc etc.

I had the gun stagnation thing... in the first 1/4 of the game? But I see where you're coming from. I think the problem is that if you are doing a lot of side mission and not advancing the plot, a lot of the good drops and special weapons are tied to plot missions or missions that only unlock after you have completed certain plot missions. It's a bit lame, but at least it does guarantee that you're going to have a gun that will get you through the next part of the game with relative ease.
I'm probably only about halfway done and have managed to not get spoiled, but everything about the story is improved. Characterization especially. Instead of running around listening to Claptrap be annoying for a few hours you actually get introduced to characters with personalities that are interesting. Which means you get invested. Which means that when big plot things do happen you actually care, instead of how it was in the first game.
For the record I did manage to wade through about ....70% of the DLC for Borderlands before I gave up. It didn't add anything, really. Mostly it was just another excuse to shoot things for a few hours.
Really the only time I've been hoarding weapons is when I get a weapon with a really good elemental bonus, because I know I might need it for a mission that wants me to have a fire weapon or an acid weapon... but yeah. I feel you a bit there.

Yeah, side missions can slow down your pace a lot. I wish you could have more than one mission up on your map at once - there are a few zones where you get three or four missions all in the same area and have to keep swapping between them in order to hit everything at once. I wish there were actual "save game" checkpoints too, especially in some of the longer mission areas. Having to start over at the beginning of a zone if you need to log out partway was really demoralizing for me, especially on days when I only had an hour or so to play in.
I was really good in the beginning about not hoarding my weapons, but once I got towards the end of normal and bosses started to drop more purple, pink, and orange loot, it got a lot harder. I felt bad selling off what were technically good weapons, even if they weren't as good as whatever weapon I was already using.
I think you're exactly right about the characterization being improved. Even the characters I hated on a personal level (Jaaaaaaack) were really well characterized. The voice acting is top-notch too. You have some really awesome story coming up for you, and I don't want to spoil any of it, so I'll leave off there.
