Because they lack fail-safes, for one. If you put all the power into one hand, what are you going to do when that person turns mad or just stop caring? Besides, power is a corrupting factor in itself, so we need regular hand-overs of power.

That doesn't have anything, in principle, to do with democracy. That's a question of balance of power in the first case, and regular changes in administration in the second case. You could do both of those without ever holding popular elections.
