Tbh, it does feel kind of childish and immature to me. I liked animated stuff when I was a kid and some (although not much) even as a teen, but then Supernatural, Sherlock, Tolkien movies and other stuff came along and I drifted into these fandomes (although I'm into others nowadays). I can't imagine ever watching anime again. The idea alone bores me and makes me roll my eyes.

On the other hand, you like what you like and it's not hurting anyone, so if it makes you happy, there's not really anything wrong with it.

Why does it feel immature to you? I don't see it that way at all, so I'd like to hear your view on it.

Probably because it was something that I liked when I was a kid and that I grew out of when I got older and supposedly more mature.

Also, most anime doesn't seem particularly complex or "deep" to me. Be it on the plot level or on an emotional level. It just seems very... superficial, I guess and simple. The plots are either too boring or weird for me and the emotional connection, which is necessary for me to be interested in something, just doesn't exist. Probably because the characters are just 2D drawings and not actual people.

I could make the same argument about television shows. The plots are boring to me.I'm the opposite of you with emotional connection; the 2D characters seem more real to me because they exist in the context of their own world. With live-action, it feels fake because I see the actors everywhere in interviews and other shows so I can't immerse myself in the world or characters.

Saying something is immature just because YOU liked it as a kid and don't anymore is a little unfair.

(And acting like SPN, etc. is so much more mature is a little silly to me. Isn't that show marketed towards teens? Unless you are a teen, in which case...fair enough I guess but I hope your whole perspective on this changes.)
