I used to be really into Vlogbrothers, but over the course of nearly a decade, I've kind of faded away.
And I briefly was really into the Screen Junkies/Movie Fights/Honest Trailers conglomerate (and I still like Honest Trailers) but something about them started to annoy me. I'm sure it's partly because of how hard they pushed the YouTube Red pay-to-play side of things.

Feast of Fiction. There's the recipes and the food of course, but I love Ashley and Jimmy. They always seem to be having fun and it's really infectious.
For knowledge-related stuff, any of Brady Haran's channels (numberphile, computerphile, etc). It's more dry and serious, but they're very informative.
There's also TED-Ed, which are animated mini-lessons on a variety of topics. The narrator has a very soothing voice.
Oh, Wong Fu Productions. I like they're stuff.
smalin and gerubach for scrolling scores of classical music.
Moon Hooch and Goose House because their music is awesome and you should totally give them a try.

I also really like Your Dinosaurs are Wrong. The host is adorably awkward, and it's cool dino facts about cool, but not very accurate, dino toys. (His reaction to the posture of the Therizinozaur toy is brilliant.)
