I haven't seen the anime yet, but as far as the webcomic + manga goes, Mumen Rider and Saitama have a pretty cute friendship sort of thing going on. Mumen is a genuinely good guy, and actually respects Saitama, and vice versa. There aren't too many scenes of them together, but the few that there are tend to be noteworthy. It's just great seeing an honestly good character like Mumen when a lot of the heroes are vying for fame and power, and the respect shared between him and Saitama as unsung heroes is fantastic.
With Sonic, I think it just goes back to the friendly enemy kind of thing. Well, friendly on Saitama's side, which is amusing, but kind of obsessive for Sonic. And that has it's appeal, I suppose. For Sonic/Genos, there's the allure of hostility on both sides, but I would chalk up most of their popularity on being the most typically attractive characters in the series.
So yeah, I don't ship any of these pairings, but I can see the reasons why some people might.

Yeah the Saitama and or Geno x Sonic thing is just mainly because people find Sonic hot and they want to see somebody plow him. :P (What ever happened to just enjoying characters as-is?)

Mumen Rider, I suppose it just sounds like one of those random side pairings that pops up? I dunno, I guess I can see why some people might enjoy it but I kind of feel like it's the same deal with Sonic and Mumen, I feel like some people just can't enjoy characters as they are.

Although I suppose some people could say the same thing about Genos/Saitama, but I feel that is a bit different since Genos at least is pretty canonly devoted to Saitama, and while Saitama is a little harder to pin down RE: feelings wise for Genos, I think it's obvious he at least likes him and considers him a friend/roommate. The other two characters though, it just seems like one of those "if they're remotely attractive, they need to be banging someone/something" deals.

Yeah, I totally agree with everything you're saying. I remember first going into the AO3 tags after the anime came out hoping for some good fic, and just being completely bemused by the ships. Ship and let ship, but there are definitely those undercurrents of shipping only attractive characters, or focusing only on the "attractive" half of a pairing.
Honestly I'm mostly into OPM for the friendships and comedy and that's what I look for in fandom work (with a side helping of Saitama and Genos, I'll admit). I agree there's a lack of appreciation of characters for what they are without all the added bells and whistles of shipping, but if that's what people want, alright. It can be a bit of a bummer in navigating fandom, especially in regards to certain characters that become eclipsed by a pairing they're in, but at least we have great canon that is already very satisfying.
