Cooking thread

I have some Portobello mushrooms and some red bell pepper that I don't think will survive in my fridge while I'm gone over Christmas. Can I just cut and freeze them for soup later? Seems I remember hearing that some fresh veggies don't do well going straight to freezer but I don't remember what.

If it is soup, you might as well make them into a stock now and freeze the soup stock.

Not speaking from experience, but surely the red bell pepper would do fine? I see those in the frozen veggie section of supermarkets all the time. Seems common enough, anyways.

Bad idea. Any fruit or veg that has a high water content must be flash frozen, not regular frozen, to prevent cell membrane rupture. The supermarket bell peppers have been, if the OP tries to do that with their own freezer then they'll disintegrate upon defrosting and be unusable even for soup.

Honestly, I think as long as OP doesn't expect to have whole, firm pieces of mushroom or pepper, they'll be fine. It affects texture, not taste.

Seconding anon. I don't know if those can be frozen as-is, but if you cook them there should be no problem. You can make a condensed portion of soup and freeze that, or just boil/steam/otherwise cook the vegetables and it should be fine.

iirc a lot of fresh vegetables don't do well in the freezer (and potatoes basically never at all).

The peppers should survive a freezing.

The mushrooms on the other hand, I don't recommend freezing if you want to eat them raw later. For cooking or soups, you can thaw and use them.

Got any recommendations for vegetarian stovetop recipes that are filling and not a hassle? I don't have an oven, sadly, but I need to cook and I'm feeling like something new.
Also rice-cooker recipes which don't involve rice (I've got the rice making down!)

They should be fine, yeah. I'd pre-slice both and try to freeze them on a baking sheet because you won't be able to slice them after they thaw, though.
