In the case of Kuroshitsuji though, it's very clearly stated that Sebastian is a demon that Ciel made a deal with to get out of the bad situation he was in and t help him get revenge on the people who killed his parents. Ciel knows what's going to happen once he enacts his revenge and for all we know, he seems perfectly okay with it if it means avenging his parents. Plus as a demon, Sebastian has different morals than humans.
