I've had cupcakes from Sprinkles, this high-end cupcake bakery (cupcakery?). The line was long and they looked good, so I thought the price would be worth it. I was so wrong. They were terrible. The bread portion was dry and flavorless and the frosting portion tasted like chalky vanilla. I honestly couldn't believe that I was the only one who thought that. It may not be gourmet, but I'd rather make cupcakes from a box and decorate them with a can of frosting.

Good for you for seeing through the hype.

Honestly, I'd rather spend the five bucks on a box cake I can make myself. Then I get a large cake. Cupcake? No. Platecake!

I've heard this complaint a lot. Honestly, I think people buy cupcakes more for the idea of it being an indulgent treat than for the actual flavor, and they're not discerning enough to realize they're eating seriously dry cake (that may well be from a mix) and a ton of crisco with sugar and food dye mixed in.

IMO boxed cake mixes have gotten *too* moist, to the point where they're just mush and the cake falls apart. I like some of the boutique cupcake places because I like that the cake has a bit more texture to it. Some call it dry, I like pastries to be dense and chewy, not soft and crumbly.

If your boxed cake is mushy and falling apart, the issue is probably more to do with an error in the baking process than the mix itself. Be careful that you're not adding too much liquid or underbaking it by accident.
