Re: Washington DC
The Holocaust Museum is excellent, but I'd say do that on a day you aren't planning anything else because it really takes a lot out of you.
Don't do the American History museum unless you're interested in pop culture history and First Lady clothes(and even then it is still small and disappointing museum compared to the other Smithsonian ones).
Food-wise, you should totally check out the food carts. There are some amazing ones. Here's the page that has the schedule of what trucks will be where when: http://foodtruckfiesta.com/dc-food-trucks/

Yeah, a lot of people said that about the American History museum!
Re: Washington DC
I think early in the vacation for the Holocaust Museum is fine. I just had originally planned on doing that and something else the same day, but I had to go back to my apartment because it took a lot out of me. It is really emotionally draining.
Also, don't eat in the museums if you can avoid it because you will spend a lot on food there. Some of them have fast food things outside, and there are usually food trucks around.

There was also a crape place just down the street. I was kind of struggling for money for a few months after that because of how much I spent on food.
