One of my favorites (but be warned, you need a strong stomach) is Night and Fog, a French documentary filmed back in 1955 about World War II and the concentration camps. We watched it in high school and it was on Hulu at some point. I think it's part of the Criterion Collection.

"Welcome to North Korea" is another interesting one on the atrocities committed in North Korea. I have no idea where I found it, but I ended up downloading it.

Mm, genocide documentaries are important but they're definitely something I need to be in a certain mood for.

If you're looking for long series documentaries, look up Ken Burns. He has done TONS of different series that aired on PBS. Two I can recommend would be his Civil War series or his series on Jazz, if those are your things. I think he did one on baseball more recently.

I love his Civil War series, but I don't think I've seen any of the others. Looks like he did one on Prohibition. That'd be cool.

With him, if it's not on Netflix or streaming, your local library might have a copy.
