* Ken Burns' Civil War series is a classic
* The BBC did this great series with archaeologists living under historical conditions and showing you what it was like. "Tales from the Green Valley" was the first, but the rest get even more detailed and interesting: Tudor Monastery Farm, Victorian Farm, Edwardian Farm, Wartime Farm, Secrets of the Castle
* More excellent BBC docs: A History of Scotland, Vikings
* Secrets of the Dead has quite a few episodes on varying subjects
* Tim's Vermeer - some random non-artistic guy tries to replicate a Vermeer painting
Food/Culture:
* Rick Sebak has some lovely ones mostly about the U.S. and specifically Pittsburgh, his hometown, but my favorite is called "Sandwiches You Will Like"

Cave of Forgotten Dreams: neolithic cave art. If you ever get a chance to see this in a theatre in 3D DO IT. I hate 3D and this is awesome.
The Art of the Steal: art theft.
Knuckleball: a documentary about the rarest and most unique pitching style in baseball. I guarantee this is accessible and interesting to a non-baseball fan. How can you not be fascinated in what makes THIS work?!

(Anonymous) 2016-01-12 03:43 am (UTC)(link)Absolutely fascinating in-depth documentary about the Tigris-Euphrates marshes in Iraq, how they were destroyed and how they're being restored. I felt they did a good job focusing on the local people and local efforts towards restoration compared to most nature documentaries like this which can come across very poverty-tourism-ish.

(Anonymous) 2016-01-12 04:15 am (UTC)(link)Okay, for crime/dark documentaries on Netflix, you've got Shenandoah, the Impostor, Dear Zachary (BE WARNED THIS ONE'S BRUTAL), Into the Abyss, Cropsey, The Price of Gold. Central Park Five, a classic if REALLY depressing. After Tiller, about late-term abortion providers, is really heavy stuff but incredibly moving. Capturing the Friedmans isn't on Netflix, but it's well worth seeking out if you want some fucked up family stuff.
If you're into the history of criminology I HIGHLY recommend both the Poisoner's Handbook (on Netflix and on the PBS website) and Of Dolls and Murders (you can find this one online). These are a couple of my absolute favorites.
My TOP RECOMMENDATION, though, is a documentary called Slingshot. It's on Netflix, and it's about the man who invented the Segway, but it's so much more than that-- turns out the man who invented the Segway is probably the best human in the world, and the Segway is by far the least of his inventions. Most of my recs are p dark crime-focused movies, but if you want an actual feel-good documentary that makes you feel comforted and optimistic about the world, watch Slingshot. Watch it even if you don't want that; it's a lovely movie and he's the sweetest man in the world.
