I think you're fine. Your fandom might be different but this appears to be what most people actually want if they aren't outright looking for just porn.

It's more *plot happens* *characters think deep stuff about their relationship* *characters get their answer* *character have sex described in a very explicit way to celebrate*

How about integrating your sub-plot with your main-plot? If we're talking about an action plot, coffee breaks still have to happen, and talking can happen in coffee breaks (or whatever kinda breaks), and THEN: moar action! another break and moar talking! and so on. Just watch your pacing.

Yes, doing it that way is more work, but I can almost guarantee you that when the happy!fireworks!celebration!sex happens at the end, it won't feel tacked on.

If you're worried about a roller-coaster sort of feeling for readers, nope, don't sweat that at all. If it's an emotional roller-coaster for your characters, that's what your readers should be feeling, too.
