If you want something low-key, I can't recommend anything higher than Mushishi. It follows a traveling doctor of the supernatural. Each episode is usually pretty standalone with a new place, a new illness, and a new creature, and the protagonist and a couple recurring characters being the linking threads. Episodes can vary from dramatic to horrific to simple and sweet but it stays subdued, maybe even understated. Though the character art is simple, the backgrounds are lushly painted, and the musical scoring is excellent. I was so excited when a surprise second season came out, and I'm itching for it to come to the US. I want to throw my money at it.
