ME1 is the one that's closest to Bioware's roots in their old D&D properties Baldur's Gate and Neverwinter Nights, which is the main reason why combat is such a drag. It's also a significantly older game, coming out in 2007, which is why the map design is a bit under-detailed.

The oldest Bioware game I own is Jade Empire (because it was free), so I'm definitely not used to the style!

I think my main problem is that it almost seems like it's pretending to be a bigger game than it really is, I guess? Most of side-quests are the exact same thing over and over and over again, making it such a chore to complete them all (which I don't have to do, of course, but it still sucks when you don't want to play such a large part of the game).

Land on a planet, fumble around on the Mako for a couple minutes, kill a group of husks/geth/biotics/evil aliens, leave & repeat 50 more times.
