Stiff: The Curious Lives of Human Cadavers, by Mary Roach

Covers things like training plastic surgeons, organ donation, automotive safety tests, alternative burial, etc.

Very engagingly written, but not for the squeamish.

I listened to the audiobook of this and it was very interesting. Disturbing, but interesting.
