Most the ones I read are true crime/forensic-y in some capacity or another.

Devil in the White City About H.H. Holmes, America's first serial killer, with world building from the creation of the Chicago World's Fair.

The Melting Spoon, a walk through the periodic table of elements.

The Poisoner's Handbook, about murder, forensic science and chemistry during prohibition (v. good, would definitely recommend).

The Body Farm, make sure you have the Bill Bass book, not the Patricia Cornwall one, about his attempts to start up the titular body farm.

Blood Secrets about blood spatter reconstruction.

Anything about search and rescue dogs.

Editing to add The Man Who Ate His Boots all about the search for the northwest passage, and why it was a Big Deal.
