One: it will stink.
Two: the white part will discolor to a yellow or amber tint.
Three: the texture will be drier or runny.

NAYRT, but doesn't blue cheese often smell? I love it, but it has an unfortunate smell. I've also noticed a yellowish tint on it before, I think. Unless I was unknowingly eating bad blue cheese...

The stink is supposed to be like ammonia, not some ordinary cheese smell.
