I think the "not as fascinating as they look [to me]" is heavily implied, given the context. A lot of people (myself included) think forensic work looks fascinating, but it's arguably not quite as thrilling as tracking down a whole town of vampires or discovering a fallen alien spaceship. That's not a slam against forensic work at all, just an acknowledgement that everything on TV looks more exciting than it does in real life.
