Did you put something on it to make it ooze syrupy juice? ... Because otherwise I think there's something wrong with your sweet potato.

? If you cook a sweet potato long enough it does liquify a bit.

If you overcook it to hell and back, sure. But "liquify a bit" is way different from oozing syrupy juice.

I let it bake for an hour. It was soft and hot. Maybe 'oozing' wasn't the best term, since it was only a little syrup that dripped from the hole but the bottom got a bit wet from it too.

Er, no. There won't be fountains of liquid, but if you bake/roast a sweet potato until it's soft, there's going to be some liquid.

Yeah, it's called steam and condensation. Not juice and certainly not syrup.

When it drips out of a hole at 400 degrees and sticks somewhere, trust me, it looks more like syrup.

A quick google search of "syrupy stuff out of potatoes" shows that quite a lot of people describe a syrupy substance coming out of their sweet potatoes.
