To me part of the issue might be (and I say this as somebody who does want more diversity) that these issues need to be worked into the worldbuilding. Like, you can make up flying ships and I go okay, fine. Flying ship.
But if you have a small town in the middle of nowhere with a racially diverse population, I expect an explanation of how they all got there, because racial populations tend to be grouped in different locations. To me, the geographic issue is greater than the cultural. You can make a culture where disenfranchised groups aren't - that's fine.
But spend ~2 minutes considering why/how your incredibly racially diverse groups got that way, what their original cultures are, why they traveled, where the major culture centers of the world are, etc.
Obviously none of these are actual reasons not to include more diversity. It just demands, y'know, worldbuilding and consideration of these issues.

I would wonder, if it was a little village with a little population, why the groups stayed separate. Like, pretty soon you'd have everyone having babies with everyone else. Well, that, or inbreeding with lower IQs and rare genetic diseases popping up because they refused to mix.

Yeah, but there's a difference between interbreeding with somebody in the village across the hill, and somebody from another continent.
Have one of the characters be half-local half-something else, child of an itinerant peddler who settled down.
Really, if you had a few individuals in a different-racial-majority area, you'd probably have a lot of mixed-race kids and features "cropping up".
I feel like you're implying that across one hill you get people who look different racially, and that's not usually the case.

You've reminded me of that thing fantasy games do where they have a whole world full of white people, one inhabited desert in the world, and one small town of brown people in that desert. I honestly find it more obnoxious than having everyone be white. (I think Avalon Code's excuse was that all the brown people were actually made of sand and had no souls.)

And yes, I agree with you. That one country of "foreigners" is just ????
I'd rather have them not pretend to cover the entire world, or at least try to have more than that one little town. I had the same issue with ATLA, actually - they want us to believe that there are FOUR NATIONS in the ENTIRE WORLD?? That is one small world.

When it gets right down to it, my thoughts on this issue are as you say - I want reasoning for how and why the racial groups are present, even if it's a single sentence in the establishing description of a big city that says something to the effect of it having a lot of trade, from a lot of places, bringing together a lot of people of different types. Make some indication like that and any number of POC characters are instantly explained in White People city, or conversely white people in a POC city.
