in this video though, the kid ran up to the Anakin actor, the parents weren't forcing her to do anything. I thought it was just, "oh the little girl has a crush on Anakin and he's playing along, it's a sweet, innocent thing." Not, "the parents are trying to force their kid to act out their shipping fantasy."

I think that was OP's point? If the kids interact with the face characters it's adorable, but parents acting on their shipping fantasies by using their cosplaying kids is creepy.

I don't think OP meant for the background pic to be an example of the latter. I'm sure there are some pictures floating about the net where the kids look unhappy posing with a face character, if that had been OP's intent.

I assumed this wasn't an actual pic of OP and terefore not necessarilly a real example of this.
