People just get horny, sometimes people with good chemistry get horny at the same time, I don't get why they need to be in 'heat' or whatever

To me this is sort of like saying, "Sex is good in general though, so what's the point of fantasizing about mind blowingly great sex?"

There's basic human horniness, which can be hot when it's well written, but can also easily just be boring if the setup isn't good. Mating urges, on the other hand, are a kind of trump card that instantly makes everything hotter, because the characters want it so bad, it feels so right, they almost can't control themselves, the horniness is all encompassing, etc.
